Shortly after the first, here is the second part of the Sinteis series (synthesis in Gaelic), which, in the intentions of the guardian deity of The GlenAllachie, Billy Walker, aims to highlight the synergy between different but complementary casks.

This time it’s up again to new and ex sherry casks, with the former being made of Scottish wood (a rarity in the whisky world) and the latter being ex sherry oloroso, bottled at cask strength.

Released at the end of August 2025, it follows a few months after the first version.

Tasting Notes

Raspberry, sweet cherry, and ripe plum are the first to emerge from the glass, with nutmeg and cinnamon caressing the nose alongside a hint of black pepper, evoking memories of apple strudel. In the background, coffee candy, cocoa, chestnut honey, and candied orange. Over time, a balsamic vein and notes of wood shavings intensify. Full-bodied.

Always very sherried even on the palate, with strongly winey and dark connotations, featuring a pronounced spiciness (black pepper and cloves leading the way) to highlight the ripe red fruits, with hints of toasted cane sugar, dried figs, citrus (especially blood orange, even dried) and cooked honey. Wood and balsamic veins also return, although less pronounced than on the nose, while the notes of cocoa and coffee fade into the background. In length, tannins, nuts, and a hint of soy sauce.

Finale quite long and spicy, astringent with red fruits, dried orange, pine nuts, dried figs, and balsamic notes.

Review: A classic sherried whisky with some balsamic notes, a bit lacking in character and personality, getting lost in the vast sea of other similar bottlings: well made, but not standing out.
