Billy Walker’s inspiration has led to the debut of a new series in April 2025, which aims to showcase how the combination of two very distinct but complementary casks (ex-sherry and new) can create something unique, highlighted by cask strength and the choice of a different vintage each time.

This first bottling under the Sinteis label (synthesis in Gaelic) combines first-fill ex-Sherry PX casks with new Chinquapin American oak, the latter recurring in several other GlenAllachie productions.

A few months later, the second edition was released, soon to be featured on these pages, which combines new Scottish oak casks with former Oloroso Sherry casks.

Tasting Notes

Initially, the alcohol is somewhat pungent on the nose, but over time it calms the spirits and allows the dark sweetness of muscovado sugar, ripe plums, blackberries, dates, chestnut honey, and macadamia to emerge. An intense presence of resin stands out, persistent in the background, while the aromas become increasingly dense and viscous, with notes of maple syrup, caramelized apple, butter tart, and milk chocolate. The spices are a pronounced yet not overwhelming presence, with nutmeg, cinnamon, and cardamom supporting without overshadowing. There’s a beautiful synergy between the casks.

In the mouth, it is less oily than I expected, but it still has a good body and consistency. The dark part remains dominant, with greater emphasis on the red components of fruit and jam, along with hints of morello cherries, sweet licorice, rhubarb, and chinotto. The sherry notes are clearer, but the new casks assert their presence with sandalwood, a touch of incense, and a balsamic finish, while the spicy components (including star anise and candied ginger) act as a connecting thread. In depth, there are flavors of milk chocolate, raisins, and baked apple.

Finale quite long with balsamic and slightly herbal traits, featuring spices, dried red fruits, chocolate, anise, and a light salty touch.

Review: Successful experiment, the synergy of the casks works excellently, especially on the nose, perhaps with some flaws in tasting, but depth and richness are undeniable.
