The second of the three basic GlenAllachie peated bottlings, with 35ppm smokiness thanks to peat from St Fergus (near the coast of Aberdeenshire), characterised by a very long fermentation of 160 hours and a mixed maturation: first in ex-bourbon casks, then in ex-oloroso sherry and PX puncheons.
Tasting Notes
You put your nose into the patisserie, where the counter is covered with freshly baked fruit tarts: blackberries, blueberries, apricots, plums. A couple of apple strudels in the corner, lots of slivered almonds scattered about, and the (vegetable) peat integrated into so much sweetness, with a firm but not overpowering smoke, cloaked in cinnamon. In the second row, Sacher torte (with orange marmalade) and a mineral vein, especially along the length. Captivating.
On the palate, the entry is striking, with a balsamic note, mentholated at times, which creeps into the incense smoke and gives the whole drink a freshness, characterised by a certain lightness in the background, where all the fruity parts of the nose can be found, although less incisive and marmalade-like. There is more emphasis on the planty side, with notes of coffee, bitter cocoa, almonds and spices (black pepper, cinnamon, a pinch of nutmeg and aniseed).
The finish is not very long, with incense, spices, nuts, candied orange, cocoa, a balsamic vein and a salty note.
Decidedly pleasant and accommodating, it puts all the pieces in place, with some flashes of personality that promise future pleasures that can only be perceived in embryo for now.
