In a long chat with one of the founders of Yorkshire’s first distillery, which you can find published here, we got to know the spirit of these true whisky artisans, who entered the industry bringing all their experience as farmers and deep connoisseurs of the raw material.
This was the first whisky they produced, preceded by some special editions called Maturing Malt because they were still too young, released in 2019 in 6,000 bottles and sold out immediately.
It was the result of combining 16 casks, filled in 2016, thus producing a three year old whisky that was the distillery’s calling card.
This was followed by a Second Release plus other special versions, which will gradually add to the portfolio of this craft distillery.

The nose is very young, almost like a new make, with warm impressions of bread and cereals accompanied by a light note of acetone. If you let it breathe, the whisky soon opens up to softer, fruitier tones, with rather delicate tones, including green apple, plum, banana, vanilla and icing. The base is herbaceous and lemony, underlining the fresh youth of the distillate.
On the palate, it is dry and compact, offering a slight alcoholic tingle that warms the aromas of cereal biscuits, banana, vanilla, citrus touches, nuts, dried apricots and a dash of lemon. Impression of cinnamon. The herbaceous tones remain well present and characterise the flavours, more decisive than on the nose but not aggressive.
Final medium length, dry, still dominated by malt with bitterish veins and nuts, cinnamon, lemon.
A very young whisky and proud to be so, with the lightness of its years that already has a good character, even if streaked with a few irregularities that, however, do not spoil its gentle and fresh approach. An excellent promise for the years to come.
