Another of the (very few) seasonal releases from the Daftmill farm distillery, which strictly follows the rhythm of the seasons for its bottlings from the Lowlands.

We find ourselves in the summer of 2025, with 5,250 bottles produced from 23 first-fill ex-bourbon barrels that contained a distillate from August 2012, made from Pelican quality barley from their fields.

Tasting Notes

A burst of fruit on the nose, intense and fragrant, ranging from ripe (peach, apricot, banana, melon) to tropical (mango, pineapple, passion fruit), with hints of candied fruits (coconut, orange) and dried fruit (apricot, apple). In this triumph of fruit salad, notes of pastry (shortcrust pastry, vanilla, powdered sugar), acacia honey, and marzipan intertwine, with an increasing waxy aspect that evolves over time. In the background, wet paper and a faint lemony note. Generous and elegant.

The palate reaffirms itself in a fruit-forward profile, leaning more towards tropical notes with citrus hints (pink grapefruit), supported by spicy undertones (white pepper, ginger) and hazelnut, with a hint of coffee weaving between the sweetness of almond cream, ladyfingers, baklava, and cotton candy with just a drop of anise. A mineral vein permeates the flavors, with a floral and vegetal touch between wet grass and lavender.

Rather long finale where fruity and citrus notes persist alongside vegetal and vaguely balsamic ones.

Review: A full and elegant dram, almost masterful in composing the aromatic palette. Perhaps, but here we are truly in the realm of ultra-personal perception, a bit cold in its technical perfection.
