In 2025, just like in 2024, Talisker presents another imaginative release: after the stones rolled in the cask, this year it’s the toasting of the wood achieved with the heat of the volcanic rocks of Skye.
These new casks are declared only as finishing, the main ageing is unspecified (but intuitive).
Tasting Notes
The ocean is the main character of the nose as expected, with iodized and minerals waves with sulfurous traits that could evoke the volcanic rocks used for toasting. Marine connotations embrace fruity evocations between fresh (peach, pear, pineapple) and dried (grapefruit, mango), secondary notes of pastry (lemon tart, meringue), and smoke, well integrated and without a desire for protagonism, that oscillates between vegetal, woody, and balsamic. Clean.
The mouth is marked by the distinctive peppery signature (between black and white) of Talisker, quite vibrant, which frames a heart that is still coastal but more inclined towards sweetness, with a greater presence of vanilla and pastry cream accompanied by sugar-coated almonds, meringues, and slight buttery notes. The peat shifts towards grilling, of the sea (scallop) and fruit (pineapple, peach), with the smoke still vegetal and woody, more the former than the latter. Citrusy in length, along with a balsamic note between eucalyptus and anise.
Finale quite long and spicy, with sweet and herbal smoke, salty, featuring white fruit, cream pastry, meringue, and balsamic notes.
Review: Beyond the narrative, a lovely round Talisker, fresh, with enough personality to stand out as a special version of the distillery.
