Tasting Notes
The nose is very fresh and fruity, with a juicy and inviting weave of white and tropical fruits: peach, apricot, ripe red apple, sultanas, plum, pineapple and lychee. Touches of lemon cream, short pastry, eucalyptus honey and almond confectionery, with a herbaceous and mineral vein running through them, between green tea, wet stone and a hint of artichoke. In time, it gives way to caramel, lemon tart and a drop of propolis. A delight.
On the palate, it starts with a rather lively spicy push of black pepper and ginger, with a hint of cinnamon in the background, taking up the sweet aspects of the nose with an edgy, citrusy soul of grapefruit and lime that flickers on the tongue. The vegetable and mineral soul also increases in intensity, giving rise to a rich and complete symphony of evocations, with a final salinity that brings the glass easily to the lips.
The finish is quite long and dry, with hints of pepper and ginger on citrus, white fruit (a little) and tropical fruit (more), pastry, custard and milk chocolate.
It’s not what you’d expect from a sherry matured whisky, which works at the top of the foil, leaving plenty of room for the soul of the distillate to shine through in a dram with a classic and satisfying profile, an elegance of yesteryear.
