The third and (for now) final bottling in the Wonders of Wood series, which focuses on the maturation of the typical Irish single pot still in new casks of different types of wood.
Released in the first half of 2024, it sees the mashbill distillate from Teeling’s classic recipe (malted and unmalted barley in equal proportions) maturing for over four years in casks made from wood that is virtually never used outside its homeland (and distilleries such as Mackmyra): Swedish oak.
As with the whole range, new Irish oak trees were planted in the Wicklow area in conjunction with the Tree Council of Ireland.
Tasting Notes
Nutmeg and coffee are the first to emerge from the glass, along with a rather pronounced impression of candied panettone. Chestnut honey, blackberry compote, candied ginger and a hint of clove complete the picture, with undertones of caramel and malted biscuits and a balsamic note on the long finish. Captivating.
Light body on the palate, which adds black pepper and chilli to the spices, bringing the coffee impression to the fore, accompanied by a note of milk chocolate (praline). Caramel, malt, vegetal and balsamic notes, pecans and honey enrich the initially rather monochrome profile and give it more substance. Slight background of toasted wood.
Medium length finish with balsamic, vegetal, spicy, coffee, milk chocolate and nuts notes.
I do not have much sympathy for these young whiskies aged in alternative woods, like the Portuguese one, and this Swedish leaves me rather cold: apart from the coffee note present in both, it does have the advantage of a more varied palate, but still not very incisive or deep.
