I continue my trip to Ireland by tasting another distillate from the Cooney family-run distillery.
This time I will taste the PX cask bottling.
This distillate spent two and a half years in Oloroso Sherry casks and then transferred to 500/600 litre Pedro Ximénez casks.
Unlike Scotland, in Ireland casks of any wood can be used and for this they used PX casks from Toneleria Rodriguez, some oak and some chestnut.
I think it’s time to get closer to the nose and so I start with the tasting of this fine distillate.
Tasting Notes
Colour: gold
The nose immediately shows cherry, blackberry, raspberry, red grapes, dried figs, strawberries and cocoa then continues with very spicy notes such as cinnamon and turmeric and finally caramel.
The palate is characterised by mouth-filling pastry like honey, butter and chantilly cream continues with some fruit like sultanas and currants. Slight hints of spices such as curry and white pepper.
The finish is of medium length, creamy with hints of spice and a hint of tobacco.
In conclusion, I think it is a meditation whisky to be drunk sitting outside in the garden and perhaps paired with a fine cigar.
