We return to Ireland again, continuing to taste the distillate of the Cooney family-run distillery. This time I taste the Marsala cask bottling.
This distillate spent two and a half years in Ex-bourbon casks before being finished in fine and superior Marsala casks from the Sicilian Vinci and Florio cellars.
Who knows what will happen with this fusion of Ireland and my Sicilian homeland.
The age of the distillate varies between 3 years and 3 years and 6 months.
Tasting Notes
Colour: honey
On the nose you are pervaded by yellow fruits such as apricots and pears, then moves on to spices of green pepper and marjoram, after which it gives way to notes of caramel and cream.
On the palate, even sweeter fruits such as persimmon, prickly pear, figs and dates bring back the sweetness of Marsala Sicily. Then some spicy hints of pepper and cinnamon.
The finish, of medium length, is dry, slightly bitter with notes of spices such as pepper and fruit such as fig.
In conclusion, the Ireland – Sicily combination works very well, making this whisky perfect to drink at any time of the day, even accompanied by nuts.
