And here I am with the second (and last, for now) basic bottling of Florentis, the artisanal whisky produced by Winestillery, for the story of which I refer you to the interview with one of the founders posted a few days ago.
A mix of wheat, rye and barley for the mash, just over three years of ageing in casks that have contained Tuscan red wine produced by the Chioccioli Altadonna family, owners of the distillery.

Tasting notes

The nose is very reminiscent of a rye whiskey, with rye, nutmeg, roasted peanuts, cooked apple and pear, sultanas, chestnut honey, toffee, and a hint of black pepper. Gingerbread, cooked fruit and nuts dominate the nose, enveloped in the warmth of spices: mouth-watering and wintry.
Vinous and dense mouthfeel, with strong spicy components (star anise, nutmeg, cloves, ginger) framing fruit (stewed pear and apple, blackberries), almonds and hazelnuts, caramelised brown sugar, honey, cocoa, cooked must. Leather and a hint of crème brûlée.
Not very long and spicy finish of red fruits, cooked fruits, cocoa and a slight vegetal vein.

The casks are very incisive, but they know how to enhance the distillate by elevating it and enriching it into a full-bodied, decisive whisky. Perhaps too full-bodied, but it is a sin of youth that time can only smooth out.
