Revised and corrected version first released in 2009, just a few years after the reopening desired by Angus Dundee and made with whisky from previous stocks, it was therefore initially not available in large quantities.
It’s in fact only since 2019 that this ageing has been entirely the work of the new ownership.
The ‘title’ of this bottling is The Rather Dignified, an ironic and bizarre choice to say the least.
Bright gold in the glass.
Delicate but solid on the nose, with floral and fruity tones tending towards citrus, infused with banana, green apple, peach, apricot, vanilla and a touch of honey. With time the aromas become more incisive, opening up to sweeter and more caressing tones, with a flicker of lemon that maintains the freshness. Malt and wood in the background. Rich yet light.
On the palate the alcohol tingles slightly, underpinning a rather classic aromatic palette of yellow fruit and vanilla declinations, with a particularly sugary accent. Touches of hazelnut and pistachio. Smooth and flowing, more decisive than on the nose and without surprises.
Medium-long finish of hazelnuts, vanilla, green apple, hint of wood.
A solid, classic whisky, perhaps more interesting on the nose than on the palate, but one that knows how to make itself drinkable, excellent as an accompaniment to pastries rather than on its own.
