Some time after the first bottle reached this blog, we return to the young distillery that has brought whiskey production back to Dublin, the capital of Ireland.
It’s well known that Teeling is the first distillery to choose this city after 125 years since the last to tread its streets, and this is no mean feat: Irish whiskey is undergoing a thriving and vibrant renaissance, and they were among the first to bring it forward.
Teeling’s bottlings are by no means a foregone conclusion. Master distiller Alex Chasko’s choices are often far removed from tradition, the result of his experience in his native USA, where he worked in the West Coast craft production sector.
Chasko has been with them from the start, and this single malt is his calling card, together with the other two bottles in the “trinity collection”, representing the distillery’s search for new styles with whiskies that are not its own but are still Irish.
The result of the marriage of whiskies aged in casks that have only contained wine, it carries within itself the more traditional aromas of Port and Sherry, combined with others unusual for Irish production such as Madeira, Cabernet and white Burgundy wine. The age of the spirits is unknown, but growing at every new batch.
Will all this effluvium of wine have led the way?

The cereal with a vinous soul greets the nose, sitting on a grassy carpet accompanied by abundant dried fruit (nuts), blond orange, plums, rennet apples, red fruits, honey. Little lemon peel. Slightly waxy background. Light sweetness profile.
Coffee surprise at the first sip, as if you were drinking a coffee liqueur, followed by spicy aromas (black pepper, cinnamon, nutmeg), liquorice, walnuts (almost nocino), malted biscuits, peanut butter, green apple. Each sip brings something different, while remaining within the aromatic palette that mixes sweet and bitter together, presenting itself as light and varied at the same time. Persuasive wood in the background.
Medium length finish of coffee, nuts, liquorice, wood and malt.
Dangerously drinkable and fun, it stimulates continuous tasting while risking consuming the bottle in an all too short time, also thanks to an alcohol content that isn’t at all invasive but should not be underestimated!
