Fourth of the English distillery’s special releases, joining the two editions of Filey Bay Yorkshire Day and the version prior to this one, which featured unprecedented ageing (at the time) in former Oloroso Sherry casks.
Casks filled in 2017 that produced 2,000 bottles in 2021, as always with no chillfiltration or colouring agents: a very young whisky entirely in Pedro Ximénez is quite a gamble, will it succeed?

Tasting notes

The nose has a marked citric streak that runs through notes of nutmeg, baked apple, dried apricot, marzipan, candied orange peel and chocolate. Over time, it becomes softer and fruitier, with an impression of chestnut honey. Very classic and balanced.
In the mouth it expresses a lively but not invasive spiciness, with a definite bitter note (rhubarb and liquorice root) which, together with a distinct salinity on the length, pushes you to salivate and drink. Blueberries, orange, candied citron, marzipan, fruit plum cake. Rough.
The finish is quite long and dry, saline, spicy, baked apple, chocolate and a hint of coffee.

The distillate held up well to the power of the Sherry, producing a fairly original and interesting whisky that knows how to express the peculiarities of the casks without being overwhelmed by them. It perhaps exceeds in the saline and bitter component, which nonetheless finds its admirers and I don’t see this as a capital sin.
