The first and second releases of Spirit of Yorkshire marked the path to the distillery’s base bottling, the embodiment of the spirit and feel these craft producers aim to achieve with their whisky.
Aged entirely in Bourbon, this Flagship from the Filey Bay label joined their base portfolio in 2020 and, like previous releases, is made using only barley grown directly on site.
Since the “approach” period is over, at the moment the distillery’s fixed production includes this Flagship, the Moscatel Finish and the STR Finish, while there have been only a few special editions so far: Sherry Cask Reserve #1 and Yorkshire Day 2020.
A production that is forcibly (and voluntarily) limited given the small production capacity, but which well represents the artisan spirit of the many new distilleries that are entering the whisky world.

Malt and wood spices welcome the nose, in a very classic and smooth aromatic compartment. Lots of yellow fruit (apple, peach, pineapple, banana), vanilla, cinnamon, lemon gumdrops, sugar icing. Peeled almonds. Breath of anise in the background. Light but not ethereal.
Creamy on the palate with just the right amount of pepper, a coffee aftertaste adds dried fruit (walnut) to fresh fruit, marzipan, a touch of sweet liquorice, lemon, candy floss. Trifle integrates with sourer notes, keeping the sweetness at bay, with wood spices especially along the length.
The finish is quite long and dry, with spices, pepper, lemon, candyfloss, vanilla.
Consistently following in the footsteps of its two debut releases, this is a whisky that is fresh and lovely without being cloying, solid, perhaps still lacking a strong personality but well structured, offering what it promises (and that’s no small thing).
