I’m going back to Waterford and their search for the terroir in whiskey with a bottling of the Single Farm Origin series, the first dedicated to Sheestown in County Kilkenny.
The Shees family has resided in the territory since the fifteenth century, and their history has crossed with that of French and Napoleon.
To learn more about them and the origins of this bottle, as always on the distillery website you will find an extensive in-depth analysis.

Barley of the Irina variety, harvested in August 2015 and distilled just under a year later, matured at 35% in ex-Bourbon barrels, 21% in virgin barrels, 19% in ex-Sherry Oloroso and 25% in ex-French wine, producing 9,000 bottles in July 2020 after a little less than four years.

Tasting Notes

Full gold in the glass.
Freshly cut wood and hay caress the nose, accompanied by a delicate scent of linden. Very fruity with peach, apricot and red apple intensively expressed on a soft bed of vanilla cream and honey, Trifle and orange juice. The aromas dot the smell with decisive softness.
Creamy on the palate, with cooked fruit (apple, pear), cereals, peach in syrup, vanilla, cinnamon, a nice sprinkle of pepper and ginger, orange. Licorice and an impression of dark chocolate.
Average long and spicy finish of cereals, anise, chocolate, orange.

Very pleasant dram, soft and rich, with an uncommon creaminess and compactness for an Irish whiskey. Really a great result for such a young distillate.
