It’s been a few months since Dream Whisky, a young but well-established Italian company born from the mind and heart of Marco Maltagliati and Federico Mazzieri, made its debut as a bottler, bringing to the attention of enthusiasts its first two single casks, called N°1 and N°2, which I have already mentioned in the articles you will find linked below.
This is just the tip of the iceberg, since the two plan to launch other whiskies by 2020, pursuing a multi-faceted project that goes beyond the production and sale of whisky, and that the Coronavirus has only momentarily slowed down.
As always, the rich front label is intended to evoke the whisky inside the bottle without explicitly stating it, presenting a badger surrounded by illustrations that recall the aromas that will be found in the glass.
For those who don’t want to guess where the spirit comes from, the back of the bottle specifies that it’s a whisky from a single GlenAllachie ex-Bourbon cask, aged for 11 years.
This is obviously a limited edition of 550 bottles (50 cl), which can be purchased directly from their website at a very affordable price.
Tasting notes
Straw yellow in the glass, it almost looks like a white wine.
And it is precisely the freshness that would be found in a wine that greets the nose, herbaceous and floral, with a hint of honey accompanying cooked apples, dates, orange, cinnamon. The profile gradually becomes warmer and more enveloping, cereal biscuit with fruit (McVitie’s) and vanilla emerge. Elegant and delicate.
It flows with slightly spicy warmth on the palate, bringing together the fruit and cereal aromas in a soft, buttery tart, with honey and vanilla to complement them along with a hint of rose. The alcohol content warms without excess, supporting and containing the body of the whisky with a sweetness that is never cloying, combined with a caress of wood in the background.
The finish is quite long, with honey, cereals, vanilla, wood and cinnamon.
It has to be said that the label accurately evokes the sensations this whisky gives off. It is caressing and warm, only apparently subdued but with a full, enveloping flavour. The alcohol content is right: higher would have covered the whisky, lower would have shut it down.
