Construction of Milk & Honey Distillery began in June 2014, and within a year down flowed the first distillate from their stills, in a former bakery on the outskirts of Tel Aviv. There have been a few limited editions, but Milk & Honey is finally ready to conquer the whisky world with the first widely distributed single malt.

Given the warm climate in which they are aged, cask maturation of whiskies is very rapid, but for this bottling M&H decided to follow Scottish production standards: double distillation and ageing for a minimum of 3 years in ex-Bourbon and ex-French red wine STR (Shaved, Toasted and Re-Charred) casks.

Tasting notes

Gold in the glass.
Flowers and almonds greet the nose, with an initial alcoholic disorder that however fades away, allowing the whisky to breathe. Fruity aromas of orange, gooseberry, blueberry and melon are accompanied by a certain vinous dryness. Honey. Fresh and herbaceous side in the background, with a touch of wood. Very rich.
Freshness is the leitmotif of the tasting, a background that caresses the palate, counterbalancing the peppery nature of the mouthfeel. Spices (cinnamon, nutmeg), nuts and fruit (orange, sultanas) lie on the grassy carpet, with plenty of honey to cover them. Hint of wood.
Medium dry finish of honey, spices and wood.

Not particularly complex but rich, perhaps not yet very balanced but with an underlying freshness that you don’t expect.
Being the distillery’s entry level, and at a more than affordable price, it can only be promoted, creating many expectations for the future.
